Zucchini and feta frittata

- 8 eggs
- 2 Courgettes
- 75g of feta
- 1 mint bouquet
- 2 tablespoons of olive oil
Grate the zucchini coarsely, make large crumbs with the feta and beat the eggs in a bowl.
Mix the zucchini with mint and season.
Cook the zucchini for 4 minutes in a pre-oiled pan.
Pour the egg and feta mixture over the zucchini and mix for 1 minute.
Cook for 6 minutes.
Return the zucchini and feta frittata with a plate and continue cooking for 4 minutes.
Serve hot !
